The holiday season gets so busy. These easy, efficient recipes whip up in a snap leaving you more time to spend with your loved ones.

Leftover Turkey Pie
Are you hosting Thanksgiving or Friendsgiving Dinner this year? Worried you&rsquo;ll have room in your refrigerator for all the leftovers? Pick up some disposable pie pans and have your guests pack up their leftovers as a pie.
What you&rsquo;ll need
<ul>
<li>Leftovers:&nbsp;Stuffing, turkey, vegetables, gravy, potatoes&nbsp;</li>
<li>Extra stuff: butter, cream, shredded cheese (optional), french-fried onions (optional)&nbsp;</li>
</ul>
Mix about 2 cups of leftover stuffing with 3-4 tablespoons gravy to moisten. Press into bottoms and sides of buttered pie plate to make a crust. Fill crust with 2 cups turkey, 1 cup vegetables, and 1/2 cup optional cheese. Pour 1/2 cup gravy on top. In a small bowl, mix 2 cups mashed potatoes with 1/4 cup half-and-half or cream. Top pie with potato mixture. Melt 2 tablespoons butter and drizzle over mashed potatoes (optional). Sprinkle optional french-fried onions on top. Cover with foil and store in the refrigerator for up to 3 days. When you&rsquo;re ready to bake, preheat your oven to 350&deg;F. Bake until heated through and lightly browned, 30-35 minutes.

French Toast Casserole
This recipe can be made up to 3 days ahead and baked before serving. If you really want to get a headstart, bake it and wrap tightly in both plastic and foil. Thaw and reheat when you&rsquo;re ready to serve (reheating instructions in notes at end of recipe).
Ingredients:
<ul>
<li>Dash salt</li>
<li>1 tsp ground nutmeg, divided&nbsp;</li>
<li>1 tsp ground cinnamon, divided&nbsp;</li>
<li>1 T vanilla extract&nbsp;</li>
<li>2 T sugar&nbsp;</li>
<li>8 large eggs&nbsp;</li>
<li>3 cups half &amp; half&nbsp;</li>
<li>1 loaf (13 to 16 oz) bread (see note)&nbsp;</li>
<li>2 sticks room temperature butter, plus more for the pan&nbsp;</li>
<li>1 cup packed light brown sugar&nbsp;</li>
<li>1 cup chopped pecans or walnuts&nbsp;</li>
<li>2 T light corn syrup or golden syrup&nbsp;</li>
<li>1 cup whole berry cranberry sauce&nbsp;</li>
<li>3 T water&nbsp;</li>
<li>2 T bourbon</li>
</ul>
Directions:
For the French Toast: Cut bread into 1 &frac12;&rdquo; cubes. Arrange in a generously buttered 9X13 casserole. In a large bowl, combine the eggs, half and half, sugar, vanilla, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg and salt and whisk until blended but not too bubbly. Pour mixture over the bread cubes, making sure all are covered evenly with the milk-egg mixture. Ensure bread is completely covered. Cover with foil and refrigerate overnight (see note below) or up to 3 days in advance.
Prepare topping: Combine butter, brown sugar, pecans, syrup, 1/2 teaspoon cinnamon and 1/2 teaspoon nutmeg in a medium bowl and blend well. Sprinkle over bread before baking.
When ready to bake, preheat oven to 350 &deg;F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden. Serve with Cranberry Syrup (below).
This can also be made up to a couple weeks in advance and frozen. If making &nbsp;in advance, follow instructions above and bake until lightly golden. Allow to fully cool before covering and freezing. Remove from freezer the night before serving and allow to thaw in the refrigerator. Reheat in oven, serve with Cranberry Syrup, and enjoy!
Cranberry Syrup: Combine cranberry sauce, water and bourbon in a small saucepan and place over medium heat. Stir until warm and thinned out like syrup. Note: If making more than 1 day ahead, use a sturdier bread like French bread or sourdough. Otherwise, brioche or challah are good alternatives as well. To freeze, prepare according to directions and bake, omitting the syrup. Defrost in refrigerator 1 day ahead and reheat, covered in 275&deg;F oven for 45 minutes. Top with warm syrup before serving.

Recipes for the Holidays with The Chef's Pantry

Are you shopping for a new range or cooktop and torn between gas and induction? The choice between gas and induction depends on personal preferences, cooking style, and specific needs.
Most of us are familiar with gas cooking, but what IS induction anyway?&nbsp;When you cook on standard electric (either coil top or glass top), the burners heat up first and then heat the pan. If it&rsquo;s a glass top, the glass will heat as well. Gas heats similarly. While the flame does heat your pan directly, it&rsquo;s also heating those cast iron grates, and often the surrounding air. With induction, the magnets, once in contact with your pan, heat your pan directly. The surface between your pan and the magnets (the glass) gets warm, but not hot. Because that heat is going directly to your pan, it heats faster than either gas or standard electric.&nbsp;
<ol>
<li>Cooking Performance Gas cooktops provide instant heat and precise temperature control, allowing for quick adjustments during cooking. They are well-suited for techniques that require rapid changes in heat, such as stir-frying. On the other hand, induction cooktops offer fast and precise heating through electromagnetic fields. They can heat up quickly and provide even and consistent heat distribution. They also work well for stir-frying but are equally as good for gentle, slow, low-temperature cooking such as custards or sauces. </li>
<li>Energy Efficiency&nbsp; Induction cooktops are more energy-efficient than gas cooktops. Induction delivers roughly 80% to 90% of its electromagnetic energy to the food in the pan, gas is around 38%. This results in significantly faster cooking times. </li>
<li>Safety Induction cooktops are generally considered safer than gas cooktops. When using induction, the pot gets hot, not the cooking surface which greatly minimizes the risk of getting burned; it cools rapidly once the pot is removed. Many induction cooktops also have automatic shut-off features that activate when a boilover is detected, or the pot has boiled down and is overheating. Gas cooktops, on the other hand, involve an open flame, which can pose a risk if not used properly. </li>
<li>Cleaning and Maintenance&nbsp; Because the surface of an induction cooktop doesn&rsquo;t get as hot, it cools quickly and spills don&rsquo;t bake on. When you&rsquo;re done cooking, simply wipe it with a damp cloth.&nbsp;Gas cooktops require regular cleaning of burners, grates, and caps. </li>
<li>Installation and Fuel Source&nbsp; Gas cooktops and ranges are going to require either a gas/propane line or an electric line (110V) for the ignitors/display panel. Induction models require a 240V line. The amperage requirement of that line can vary depending on the model; typically, between 30 and 50 amps. </li>
<li>Cookware Compatibility&nbsp; Induction cooktops require cookware with magnetic properties, such as cast iron or stainless steel. Not all types of cookware are compatible with induction, so it's important to check the compatibility of existing cookware or be prepared to purchase new ones. Simply place a magnet on the side or base of the pan, if it adheres to the surface, the pan is induction compatible. </li>
<li>Ventilation&nbsp; Ventilation is always recommended over cooktops and stoves as they remove the residual heat, steam, smoke, and grease. In MA, make-up air is required for any hood venting outside with power over 400 cfms. Installing a make-up air system is not always the easiest thing, especially in a remodel or an older home. Because induction creates significantly less residual heat, you don&rsquo;t need the hood to be as powerful. If a make-up air system is not an option, an induction appliance with a 400 cfm hood can be a solution.</li>
</ol>
KAM COMMENTS Chef Linda says... <img alt="Chef Linda" src="https://cdn.avbportal.com/magento-media/KAM-Appliances/LDavey_crop_500x400.jpg" style="float: left; margin: 5px 10px;" title="Chef Linda" />When I&rsquo;m in the showroom, I cook on induction 90% of the time. Part of that is so that I can show our customers how easy it is to use, but I also really like the way it cooks. I will often tell people that if you told me I had to replace my gas cooktop at home with induction, I would do it in a second.
When it comes to cooking, both are great choices. On a gas range, it can take up to 5 minutes (depending on pot size and BTUs) to boil 2 cups of water versus 2 &frac12; minutes on induction. When you turn a pot down to a simmer, the simmer is automatic on induction (and in all fairness pretty quick on gas too). If you&rsquo;re used to gas, you will notice a lot of similarities when cooking on induction.
I get a lot of questions about cleaning &ndash; mostly from customers who have glass surface radiant electric cooktops (which can be very difficult to clean). Honestly, nothing beats induction. Because the surface doesn&rsquo;t get superheated, there really is no baked-on food. When you&rsquo;re done cooking, wipe it down. I rarely use anything more than a clean damp microfiber cloth and a drop of dish soap to clean it. I typically dry it with another microfiber cloth.

Chef Linda and Anna Rossi of The Chef's Pantry celebrated Cinco de Mayo while cooking in the&nbsp;<a href="https://www.kamappliances.com/thermador-overview" target="_blank">Thermador Kitchen</a>. We had lots of fun steaming the rice and quinoa in the steam oven, searing oranges and cooking tortillas on the griddle, making sous-vide carne asada, and cooking black beans on the induction range.

<h4>Orange-Mezcal Dressing</h4>
Ingredients:
<ul>
<li>2 ripe oranges (any variety &ndash; I like Cara Cara)</li>
<li>2 tablespoons Mezcal</li>
<li>3 tablespoons grapeseed oil</li>
<li>1 tablespoon finely chopped shallot</li>
<li>1 teaspoon honey</li>
<li>&frac14; teaspoon Chipotle in adobo</li>
<li>Salt &amp; pepper to taste</li>
</ul>
Directions:
Slice oranges in half, drizzle with &frac12; tablespoon oil and grill on high heat until nicely caramelized. Cool. Once cooled, juice one orange and add to mason jar with remaining ingredients. Shake until well blended.&nbsp;

<h4>Rice &amp; Quinoa</h4>
Ingredients:
<ul>
<li>1 cup basmati rice</li>
<li>1 cup multi-color quinoa</li>
<li>3 cups water</li>
</ul>
Directions:
Rinse rice and quinoa. Add to universal pan and add water. Cook in steam oven using full steam (210-212 degrees F) for 18 minutes. Remove from oven and allow to rest briefly. Spoon into bowl and mix with Orange-Mezcal Dressing&nbsp;
&nbsp;
Flour Tortillas
Ingredients:
<ul>
<li>1 &frac12; cups cassava flour&nbsp;</li>
<li>&frac12; tsp. salt</li>
<li>⅛ tsp garlic powder</li>
<li>&frac14; cup olive oil</li>
<li>&frac34; cup warm water plus more if needed</li>
</ul>
Directions:
In a large bowl whisk together cassava flour, salt, and garlic powder. Add oil and warm water. Knead dough until thoroughly mixed. Divide dough into 8-12 equal portions. Roll each portion into a ball and place between two pieces of parchment paper. Using a rolling pin, roll dough until it is ⅛-inch thick and has a diameter of 4-5 inches. Or, place balls of dough into a tortilla press. Repeat with remaining balls of dough. Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for 1-2 minutes per side, or until it begins to bubble. Keep warm for use in covered basket or allow to cool and store refrigerated or frozen in a tightly sealed bag.

Sous-Vide Carne Asada
Ingredients:
<ul>
<li>1 &frac12; lb. flank or skirt steak&nbsp;</li>
</ul>
Marinade:
<ul>
<li>&frac12; cup fresh lime juice</li>
<li>&frac14; cup fresh orange juice (use remaining grilled orange)</li>
<li>1 tablespoon Worcestershire sauce</li>
<li>1 &frac12; teaspoons vegetable oil</li>
<li>&frac14; cup chopped cilantro</li>
<li>2 scallions, sliced thin</li>
<li>2 garlic coves, sliced thin</li>
</ul>
Spices:
<ul>
<li>2 teaspoons ground guajillo chile</li>
<li>&frac12; teaspoon ground black pepper</li>
<li>&frac12; teaspoon ground coriander</li>
<li>&frac14; teaspoon ground cumin</li>
<li>&frac34; teaspoon salt</li>
<li>2 teaspoons garlic powder</li>
<li>2 teaspoons onion powder</li>
</ul>
Directions:
Mix marinade ingredients together in 2 cup (or larger) measuring cup. In a small bowl mix spices. Trim steak if needed. Pat dry with paper towels and place on cutting board. Sprinkle both sides of meat with spice mixture and place in vacuum seal bag. Add marinade. Seal using chamber sealer. Set steam oven to 130 degrees F and place bag in steam oven. Cook for 4 hours. At this point, steak can be cooled and refrigerated in bag for up to 24 hours. For storage longer than 24 hours, remove from bag and place in airtight container in refrigerator. 1 hour prior to service, remove steak from refrigerator and allow to come to room temperature. Heat grill or griddle to 325 degrees F. Sear steak for 1-2 minutes per side. Remove to cutting board. Rest for 5 minutes, slice against the grain to serve. &nbsp;


Assembly
To assemble your bowl, layer beef, beans, and any additional toppings (diced tomatoes, sliced avocado, black beans, roasted corn, cotija cheese) on top of the rice-quinoa mix and drizzle with a bit more of the Orange-Mezcal Dressing. Serve with a warm tortilla on the side and a Smoky Jalape&ntilde;o Margarita.

Smoky Jalape&ntilde;o Margarita
Jalape&ntilde;o simple syrup:
<ul>
<li>1 cup sugar</li>
<li>1 cup water</li>
<li>1 halved jalapeno&nbsp;</li>
</ul>
Combine water, sugar and jalape&ntilde;o in a small saucepan over medium-high heat. Remove from heat once sugar has dissolved. Let steep covered for 30 minutes. Strain to small bottle or pitcher.
Margarita:
<ul>
<li>Ice</li>
<li>Juice of 2 limes</li>
<li>2 &frac12; oz jalape&ntilde;o simple syrup</li>
<li>1/3 cup mezcal</li>
<li>&frac12; oz Cointreau</li>
<li>Smoked sea salt for rim</li>
</ul>
Prepare two cocktail glasses by rubbing the rim with a wedge of lime. Rim the glasses with the smoked salt rim. Set aside.
In a shaker filled with ice, combine lime juice, Jalape&ntilde;o Simple Syrup, mezcal, and orange liqueur for the margaritas. Fill the two rimmed glasses with ice. Strain cocktail evenly between the two glasses.
