How to Host a Cookie Swap

We all have that favorite holiday cookie or dessert. Whether it&rsquo;s one you remember making with your grandmother, or something you always brought when visiting family for the holidays. Between now and the end of December, we will be sharing some favorites from our &ldquo;KAMily&rdquo;. We hope you enjoy!
To start, we&rsquo;ll re-share one of Chef Linda&rsquo;s family favorites...
PFEFFERNUSSE These cookies, also known as peppernuts, are deliciously warming, sweet, and complex spiced cookies. If you love gingerbread or molasses cookies, give them a try. Makes 50+ cookies depending on their size.
INGREDIENTS For the Cookie: 2 1/4 cup all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 3-4 teaspoons Lebkuchengew&uuml;rz
Homemade Lebkuchengew&uuml;rz 2 1/2 tablespoons ground cinnamon 2 teaspoon ground cloves 1/2 teaspoon ground allspice 1/2 teaspoon ground coriander 1/2 teaspoon ground green cardamom 1/2 teaspoon ground ginger 1/2 teaspoon ground star anise 1/4 teaspoon ground mace 1/4 teaspoon ground nutmeg
1/4 teaspoon finely ground white pepper 1/4 cup almond meal 1/2 cup packed brown sugar 1/3 cup pure honey 5 tablespoons unsalted butter 3 tablespoons heavy cream 1 large egg
For the Glaze: 2 1/2 cups powdered sugar 3-4 tablespoons hot water (less water will result in a thicker &amp; whiter glaze)
DIRECTIONS In a small bowl, combine the flour, baking soda, salt, Lebkuchengewuerz, white pepper and almond meal. Set aside. Combine the brown sugar, honey, butter, and cream in a medium saucepan and heat, stirring frequently, until melted and the sugar is dissolved. Remove from heat and let sit 5 minutes. Stir in the flour mixture. Once incorporated stir in the egg until thoroughly combined. The dough will have a nice glossy sheen. It will be very sticky. Turn the mixture out onto some plastic wrap and wrap the dough tightly. Refrigerate overnight or for up to two days.
Preheat the oven to 350 degrees. Remove the dough from the plastic wrap and immediately roll it into two strands, each 3/4 inch thick. Slice the rolls into 3/4 inch thick rounds and roll each round into a ball. Work quickly while the dough is still chilled. Place the cookie balls on a line cookie sheet and bake for about 15 minutes or until golden brown. Remove and let the cookies cool completely.
To make the glaze, combine the powdered sugar and water until smooth. Dip each cookie in the glaze, letting the excess drip off, and place them on a wire rack positioned over a cookie sheet (to catch the drips) and let them sit until the glaze is fully hardened. Store the cookies in airtight container in a cool place. Will keep for at least 2 weeks (they're usually stored longer) and the flavor only gets better over time.

MINI CHEESECAKES WITH VANILLA WAFER CRUST
INGREDIENTS&nbsp; 24 vanilla wafer cookies or ginger snaps 2 (8 ounce) packages cream cheese, softened (not whipped or fat-free) &frac34; cup sugar 2 eggs, room temperature 1 teaspoon vanilla extract 1 can (21 ounce) cherry pie filling, or homemade cherry pie filling
DIRECTIONS Heat oven to 375&deg;F and line 24 standard muffin cups with paper liners (or foil &amp; paper for a more festive look). Place one vanilla wafer, flat side down, in the bottom of each liner. In a large bowl beat cream cheese, sugar, eggs, and vanilla extract on medium-high speed until light and fluffy (1-2 minutes). Spoon mixture evenly into prepared muffin cups (will be about 2/3 full). Bake 20-25 minutes, or until a toothpick inserted in center comes out clean. Remove from pan and cool on rack about 30 minutes. Refrigerate at least 1 hour and up to 24 hours before serving. Before serving, top each cheesecake with a bit of cherry pie filling.

Lilian, the greeter in our Hyannis showroom, loves a good gingerbread cookie. And so do we. There are so many recipes out there, but Chef Linda loves this one for cookies as well as for gingerbread houses (or maybe ovens&hellip;.).

 GINGERBREAD COOKIES
INGREDIENTS 2 cups light corn syrup 1 &frac12; cups dark brown sugar, firmly packed 1 &frac14; cups butter 9 cups all-purpose flour &frac12; teaspoon salt 1 tablespoon ground cinnamon 1 tablespoon ground ginger 2 teaspoons ground cloves
DIRECTIONS Before you begin the actual recipe, print out a pattern. Cut it out and transfer to light cardboard and cut again. (Or cut with cookie cutters.) In a medium microwave-safe bowl, heat corn syrup, brown sugar, and margarine until the margarine has melted and sugar has dissolved completely. Stir until smooth. Meanwhile, in a large bowl, whisk together the flour, salt, cinnamon, ginger, and cloves. Add the syrup-sugar-margarine mixture, making sure it's cool enough for the kids to squish the dough until it's smooth and comes away from the sides of the bowl. Wrap the dough in plastic and let it rest for at least 30 minutes at room temperature. Don't skip this step. The dough needs to relax so it's easier to roll. This is a good time to wash up the dishes and get your baking pans, rolling pin, and pattern pieces ready. If the dough is too hard or unmanageable, you can microwave it for 20 to 30 seconds. Heat the oven to 350 F. Roll out the dough 1/4-inch thick onto a sheet of parchment cut to fit your baking pan. Edgeless pans or those with only one edge are the best. Lightly flour the cardboard patterns and place them, floured-side down, on the rolled-out dough, leaving a 1-inch space between pieces. Try to fit as many as you can without crowding. For clean edges, cut with a pizza wheel. Remove and reserve excess dough. Re-roll dough scraps for the remainder of the pieces. Grab the opposite edges of the parchment paper and transfer to the baking sheet. Bake 12 to 15 minutes or until pieces are firm and lightly browned around the edges. Cool completely before removing from pans. Assemble and decorate your gingerbread house as you see fit.

Finally, we wanted to share a recipe for Roczky, a family favorite of Brian&rsquo;s from our Hyannis store.
ROCZKY
INGREDIENTS For the Dough: &frac12; lb butter, softened &frac12; lb cream cheese, softened 2 cups flour
For the Nut Filling: 2 cups ground walnut meats 1 cup sugar or &frac12; cup pineapple preserves Enough hot milk to moisten
DIRECTIONS&nbsp; To make the Dough: Cream butter &amp; cream cheese together until light and fluffy. Sift flour into creamed butter &amp; cheese mixture and mis with hands 3 to 5 minutes or until smooth and blended. Cover and refrigerate the dough for at least 8 hours or overnight.
To make the Filling: Combine nuts &amp; pineapple preserves. Add just enough liquid to moisten and keep together.
To make the Cookies: Preheat oven to 375&deg;F. Line a baking sheet with parchment paper and set aside. Roll small amount of dough paper thin. Cut the dough into 2 &frac12; inch squares. Spread about 1 teaspoon of the nut filling onto center of each square. Fold over and press edges together and shape into crescents. Bake for 20 minutes. Dust cookies with powdered sugar. Store cooled cookies in an airtight container.

Our Favorite Holiday Cookie Recipes

The holiday season gets so busy. These easy, efficient recipes whip up in a snap leaving you more time to spend with your loved ones.

Leftover Turkey Pie
Are you hosting Thanksgiving or Friendsgiving Dinner this year? Worried you&rsquo;ll have room in your refrigerator for all the leftovers? Pick up some disposable pie pans and have your guests pack up their leftovers as a pie.
What you&rsquo;ll need
<ul>
<li>Leftovers:&nbsp;Stuffing, turkey, vegetables, gravy, potatoes&nbsp;</li>
<li>Extra stuff: butter, cream, shredded cheese (optional), french-fried onions (optional)&nbsp;</li>
</ul>
Mix about 2 cups of leftover stuffing with 3-4 tablespoons gravy to moisten. Press into bottoms and sides of buttered pie plate to make a crust. Fill crust with 2 cups turkey, 1 cup vegetables, and 1/2 cup optional cheese. Pour 1/2 cup gravy on top. In a small bowl, mix 2 cups mashed potatoes with 1/4 cup half-and-half or cream. Top pie with potato mixture. Melt 2 tablespoons butter and drizzle over mashed potatoes (optional). Sprinkle optional french-fried onions on top. Cover with foil and store in the refrigerator for up to 3 days. When you&rsquo;re ready to bake, preheat your oven to 350&deg;F. Bake until heated through and lightly browned, 30-35 minutes.

French Toast Casserole
This recipe can be made up to 3 days ahead and baked before serving. If you really want to get a headstart, bake it and wrap tightly in both plastic and foil. Thaw and reheat when you&rsquo;re ready to serve (reheating instructions in notes at end of recipe).
Ingredients:
<ul>
<li>Dash salt</li>
<li>1 tsp ground nutmeg, divided&nbsp;</li>
<li>1 tsp ground cinnamon, divided&nbsp;</li>
<li>1 T vanilla extract&nbsp;</li>
<li>2 T sugar&nbsp;</li>
<li>8 large eggs&nbsp;</li>
<li>3 cups half &amp; half&nbsp;</li>
<li>1 loaf (13 to 16 oz) bread (see note)&nbsp;</li>
<li>2 sticks room temperature butter, plus more for the pan&nbsp;</li>
<li>1 cup packed light brown sugar&nbsp;</li>
<li>1 cup chopped pecans or walnuts&nbsp;</li>
<li>2 T light corn syrup or golden syrup&nbsp;</li>
<li>1 cup whole berry cranberry sauce&nbsp;</li>
<li>3 T water&nbsp;</li>
<li>2 T bourbon</li>
</ul>
Directions:
For the French Toast: Cut bread into 1 &frac12;&rdquo; cubes. Arrange in a generously buttered 9X13 casserole. In a large bowl, combine the eggs, half and half, sugar, vanilla, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg and salt and whisk until blended but not too bubbly. Pour mixture over the bread cubes, making sure all are covered evenly with the milk-egg mixture. Ensure bread is completely covered. Cover with foil and refrigerate overnight (see note below) or up to 3 days in advance.
Prepare topping: Combine butter, brown sugar, pecans, syrup, 1/2 teaspoon cinnamon and 1/2 teaspoon nutmeg in a medium bowl and blend well. Sprinkle over bread before baking.
When ready to bake, preheat oven to 350 &deg;F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden. Serve with Cranberry Syrup (below).
This can also be made up to a couple weeks in advance and frozen. If making &nbsp;in advance, follow instructions above and bake until lightly golden. Allow to fully cool before covering and freezing. Remove from freezer the night before serving and allow to thaw in the refrigerator. Reheat in oven, serve with Cranberry Syrup, and enjoy!
Cranberry Syrup: Combine cranberry sauce, water and bourbon in a small saucepan and place over medium heat. Stir until warm and thinned out like syrup. Note: If making more than 1 day ahead, use a sturdier bread like French bread or sourdough. Otherwise, brioche or challah are good alternatives as well. To freeze, prepare according to directions and bake, omitting the syrup. Defrost in refrigerator 1 day ahead and reheat, covered in 275&deg;F oven for 45 minutes. Top with warm syrup before serving.

Chef Linda and Anna Rossi of The Chef's Pantry celebrated Cinco de Mayo while cooking in the&nbsp;<a href="https://www.kamappliances.com/thermador-overview" target="_blank">Thermador Kitchen</a>. We had lots of fun steaming the rice and quinoa in the steam oven, searing oranges and cooking tortillas on the griddle, making sous-vide carne asada, and cooking black beans on the induction range.

<h4>Orange-Mezcal Dressing</h4>
Ingredients:
<ul>
<li>2 ripe oranges (any variety &ndash; I like Cara Cara)</li>
<li>2 tablespoons Mezcal</li>
<li>3 tablespoons grapeseed oil</li>
<li>1 tablespoon finely chopped shallot</li>
<li>1 teaspoon honey</li>
<li>&frac14; teaspoon Chipotle in adobo</li>
<li>Salt &amp; pepper to taste</li>
</ul>
Directions:
Slice oranges in half, drizzle with &frac12; tablespoon oil and grill on high heat until nicely caramelized. Cool. Once cooled, juice one orange and add to mason jar with remaining ingredients. Shake until well blended.&nbsp;

<h4>Rice &amp; Quinoa</h4>
Ingredients:
<ul>
<li>1 cup basmati rice</li>
<li>1 cup multi-color quinoa</li>
<li>3 cups water</li>
</ul>
Directions:
Rinse rice and quinoa. Add to universal pan and add water. Cook in steam oven using full steam (210-212 degrees F) for 18 minutes. Remove from oven and allow to rest briefly. Spoon into bowl and mix with Orange-Mezcal Dressing&nbsp;
&nbsp;
Flour Tortillas
Ingredients:
<ul>
<li>1 &frac12; cups cassava flour&nbsp;</li>
<li>&frac12; tsp. salt</li>
<li>⅛ tsp garlic powder</li>
<li>&frac14; cup olive oil</li>
<li>&frac34; cup warm water plus more if needed</li>
</ul>
Directions:
In a large bowl whisk together cassava flour, salt, and garlic powder. Add oil and warm water. Knead dough until thoroughly mixed. Divide dough into 8-12 equal portions. Roll each portion into a ball and place between two pieces of parchment paper. Using a rolling pin, roll dough until it is ⅛-inch thick and has a diameter of 4-5 inches. Or, place balls of dough into a tortilla press. Repeat with remaining balls of dough. Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for 1-2 minutes per side, or until it begins to bubble. Keep warm for use in covered basket or allow to cool and store refrigerated or frozen in a tightly sealed bag.

Sous-Vide Carne Asada
Ingredients:
<ul>
<li>1 &frac12; lb. flank or skirt steak&nbsp;</li>
</ul>
Marinade:
<ul>
<li>&frac12; cup fresh lime juice</li>
<li>&frac14; cup fresh orange juice (use remaining grilled orange)</li>
<li>1 tablespoon Worcestershire sauce</li>
<li>1 &frac12; teaspoons vegetable oil</li>
<li>&frac14; cup chopped cilantro</li>
<li>2 scallions, sliced thin</li>
<li>2 garlic coves, sliced thin</li>
</ul>
Spices:
<ul>
<li>2 teaspoons ground guajillo chile</li>
<li>&frac12; teaspoon ground black pepper</li>
<li>&frac12; teaspoon ground coriander</li>
<li>&frac14; teaspoon ground cumin</li>
<li>&frac34; teaspoon salt</li>
<li>2 teaspoons garlic powder</li>
<li>2 teaspoons onion powder</li>
</ul>
Directions:
Mix marinade ingredients together in 2 cup (or larger) measuring cup. In a small bowl mix spices. Trim steak if needed. Pat dry with paper towels and place on cutting board. Sprinkle both sides of meat with spice mixture and place in vacuum seal bag. Add marinade. Seal using chamber sealer. Set steam oven to 130 degrees F and place bag in steam oven. Cook for 4 hours. At this point, steak can be cooled and refrigerated in bag for up to 24 hours. For storage longer than 24 hours, remove from bag and place in airtight container in refrigerator. 1 hour prior to service, remove steak from refrigerator and allow to come to room temperature. Heat grill or griddle to 325 degrees F. Sear steak for 1-2 minutes per side. Remove to cutting board. Rest for 5 minutes, slice against the grain to serve. &nbsp;


Assembly
To assemble your bowl, layer beef, beans, and any additional toppings (diced tomatoes, sliced avocado, black beans, roasted corn, cotija cheese) on top of the rice-quinoa mix and drizzle with a bit more of the Orange-Mezcal Dressing. Serve with a warm tortilla on the side and a Smoky Jalape&ntilde;o Margarita.

Smoky Jalape&ntilde;o Margarita
Jalape&ntilde;o simple syrup:
<ul>
<li>1 cup sugar</li>
<li>1 cup water</li>
<li>1 halved jalapeno&nbsp;</li>
</ul>
Combine water, sugar and jalape&ntilde;o in a small saucepan over medium-high heat. Remove from heat once sugar has dissolved. Let steep covered for 30 minutes. Strain to small bottle or pitcher.
Margarita:
<ul>
<li>Ice</li>
<li>Juice of 2 limes</li>
<li>2 &frac12; oz jalape&ntilde;o simple syrup</li>
<li>1/3 cup mezcal</li>
<li>&frac12; oz Cointreau</li>
<li>Smoked sea salt for rim</li>
</ul>
Prepare two cocktail glasses by rubbing the rim with a wedge of lime. Rim the glasses with the smoked salt rim. Set aside.
In a shaker filled with ice, combine lime juice, Jalape&ntilde;o Simple Syrup, mezcal, and orange liqueur for the margaritas. Fill the two rimmed glasses with ice. Strain cocktail evenly between the two glasses.
