Nashville Hot Chicken Fries

INGREDIENTS

For the Slaw:

3 Cups shredded coleslaw mix (about half of a 14 oz. bag)

1/4 Cups + 2 Tbsp mayonnaise

1/4 Cups thinly sliced and chopped red onion

1 1/2 Tbsp red wine vinegar

1 1/2 Tbsp sugar

1/4 tsp Kosher salt

For the Fries:

1 Bag Hand Cut Style Fries, 28 oz.

1 tsp cayenne pepper, divided

For the Chicken:

16 oz frozen breaded chicken strips

1/4 Cups unsalted butter

2 Tbsp honey

1 Tbsp brown sugar

1 Tbsp cayenne pepper

1 tsp garlic powder

1/2 tsp paprika

1/2 tsp Kosher salt

1/4 tsp ground black pepper

INSTRUCTIONS

1. In a large bowl, toss the coleslaw mix, mayonnaise, red onion, vinegar, sugar, and salt together with tongs until well mixed. Refrigerate until ready to serve.

2. Cook fries according to package directions

3. While the fries are cooking, prep the chicken strips to package directions. Cut into small strips.

4. Meanwhile, add butter, honey, brown sugar, cayenne, garlic powder, paprika, salt, and pepper to a medium saucepan. Cook over low heat, stirring frequently until the sugar has dissolved and the ingredients are well incorporated.

5. Toss chicken pieces into the hot sauce.

6. Arrange the sauced chicken pieces on top of the fries in the serving dish.

7. Top chicken with the reserved coleslaw mixture and sliced pickles.

Buffalo Chicken Biscuit Bombs

INGREDIENTS

1/2 cup Hot sauce

1/4 cup butter

2 chicken breasts fully cooked and diced

2 Tbsp ranch dressing

2 cans refrigerated biscuit dough

8 ounces pepper jack cheese cut into cubes

INSTRUCTIONS

1. Preheat oven to 350°

2. In a medium, microwave safe bowl, microwave the butter and hot sauce until butter is fully melted. Whisk to combine. Add diced chicken and ranch dressing. Toss to coat

3. Lay out individual biscuits on baking sheets lined with slip mats or parchment paper. Stretch each biscuit slightly to increase its surface area. Place a spoonful of chicken mixture into the center of each biscuit round. Top with a cube of pepper jack cheese.

4. Fold the edges of the biscuit dough around the filling, pinching the sides to fully seal. Place each ball seam side down.

5. Bake for 20-25 minutes until golden brown. Cool slightly before serving.

Hoagie Dip

INGREDIENTS

1/2 red onion, diced

4 pickled pepperoncini peppers drained and diced, (reserve some pepperoncini juice for the sauce)

1/2 head iceberg lettuce chopped about the size of nickels

1 large tomato, halved, seeded, and diced

1/4 pound deli-sliced Genoa salami, sliced and diced

1/4 pound deli-sliced ham, sliced and diced

1/4 pound deli-sliced prosciutto, sliced and diced

1/4 pound deli-sliced roast turkey, diced

1/4 pound deli-sliced provolone cheese, sliced and diced

1/2 cup mayonnaise

1 Tablespoon extra-virgin olive oil

1 Tablespoon red wine vinegar

1 Tablespoon pepperoncini juice

1 tsp dried oregano

1/4 tsp red pepper flakes

1 10- to-12- inch round loaf of choice, hollowed out

1 sliced baguette

INSTRUCTIONS

1. Combine the chopped vegetables, meats and cheese in a large bowl.

2. In a small bowl mix the mayonnaise, olive oil, vinegar, pepperoncini juice, oregano, and red pepper flakes and stir until everything is all mixed up.

3. If you are going to serve within an hour, pour the dressing over the meat/veggie mixture and toss until combined. Refrigerate until ready to serve.

4. If you are NOT eating it soon, keep all ingredients refrigerated and toss together right before so that the lettuce does not get soggy.

5. Carve out the center of the bread loaf to make a bowl and cut the top piece taken out into bite-size pieces. Serve the hoagie dip in the bread bowl, with the extra bread and baguette slices.

6. Spread dip over bread and enjoy! Store leftovers in an airtight container in the fridge
